Pine Nut Tarelette

Ingredients

For the tart shells

  • 1 1/2 cups flour
  • 1/2 cup powdered sugar
  • 1 stick butter, cut in small pieces
  • 1 egg yolk

For the pine nut and honey filling

  • 1 cup pine nuts
  • 2 eggs
  • 5 tablespoon butter, melted and slightly cooled
  • 1/2 cup packed light brown sugar
  • 1/3 cup acacia honey
  • 1/2 vanilla bean, split open in the middle and seeds scooped out with a pairing knife or 2 teaspoon pure vanilla extract or vanilla bean paste
