Bacon-Wrapped Chicken Skewers w/ Pineapple and Teriyaki Sauce

Ingredients

For the Brine

  • 7 cups cold water
  • 1 1/2 cups soy sauce
  • 1/4 cup granulated sugar
  • 2 tablespoon Kosher salt

 

  • 2 pounds boneless skinless chicken breasts
  • 1 pound halved bacon slices
  • 1 large pineapple, peeled, cored, and cut into 1-inch cubes
  • 1 cup teriyaki sauce
  • Wooden skewers, soaked in water for at least 30 minutes prior to use
