Lemon Buttermilk Mum Cupcakes

Ingredients

Cupcakes

• 1/2 cup all-purpose flour
• 1/4 teaspoon baking powder
• 1/8 teaspoonbaking soda
• Pinch salt
• 1/4 cup + 2 tablespoons sugar
• 2 tablespoon butter, softened
• 1 egg white
• 1 teaspoon grated lemon zest
• 1/4 teaspoon lemon extract (you can sub vanilla)
• 2 1/2 tablespoon buttermilk
• 2 tablespoon lemon juice

Filling

• 6 tablespoon marshmallow fluff

Frosting

• 2 ounce cream cheese, softened
• 2 tablespoon butter, softened
• Pinch of salt
• 1 cup powdered sugar

Garnish

• Mini marshmallows
• Colored sugar sprinkles
• Colored jimmie sprinkles
