Raspberry Rose Vanilla Cream Cake

Ingredients
For the almond rose dacquoise

  • 1 1 /2 cups almonds
  • 1 cup powdered sugar, unsifted
  • 1/4 cup all-purpose flour
  • 6 egg whites
  • 1/2 cup granulated sugar
  • 2 teaspoons rose water

For the raspberry layers

  • 2 tablespoons powdered gelatin
  • 1/4 cup cold water
  • 4 cups frozen raspberries
  • 1/2 cup sugar

For the vanilla bavarian cream

  • 8 egg yolks
  • 1/2 cup sugar
  • 2 cups whole milk
  • 1 vanilla bean
  • 2 tablespoons powdered gelatin, sprinkled over 1/4 cup water
  • 2 cups heavy cream

Lemon glaze (prepare once the cake is set)

  • 1/4 cup lemon juice
  • 2 tablespoons water
  • 2 tablespoons sugar
  • 1 teaspoon powdered gelatin sprinkled over 2 teaspoons water
