Fish and Leeks Vol-au-Vents

Ingredients

  • 2 rolls of puff pastry
  • 1 egg, beaten and mixed with a bit of water
  • 3 tablespoons of butter
  • 2 leeks, finely sliced
  • About 3/8 cup all-purpose flour
  • 1 tablespoon white wine
  • 1 and 2/3 cups fish stock, warm
  • 1 egg yolk
  • 1/4 cup heavy cream
  • 1 cup Parmesan or Gruyere, finely grated
  • Nutmeg, a pinch
  • White fish fillets, steamed and flaked (use 14 ounces of Cod, Haddock or Hake)
  • Salt and pepper to taste
