Ingredients

For the vanilla tapioca

  • 1/3 cup large tapioca pearls
  • 1 cup water
  • 1 cup whole milk
  • 1 tablespoon sugar
  • 1/2 vanilla bean, seeded

For the milk chocolate lime cremeux

  • 2 cups heavy cream
  • Zest of one lime
  • 5 egg yolks
  • 2 tablespoons sugar
  • 4 ounces good quality milk chocolate, chopped
