Ingredients

  • 2 cups Israeli cous cous
  • 1 pound ripe apricots
  • 1/4 cup minced shallot
  • 1/4 cup green onion
  • 1 large handful italian parsley, chopped
  • 20+ mint leaves, julienned
  • 1/4 teaspoon minced fresh jalepeno
  • Juice of 1 lemon
  • 1/4 cup olive oil
  • Salt and pepper
