  • 4 slices sandwich or crusty bread, lightly toasted
  • 1/2 cup goat cheese, room temperature
  • 2 medium heirloom tomatoes (about 1 pound), cored and sliced
  • 10 kalamata olives, pitted and sliced
  • 1 handful fresh basil leaves, sliced into thin ribbons
  • Extra virgin olive oil
  • Salt and freshly ground black pepper, to tast
