Wisconsin Cheddar-Mushroom Bundles

Ingredients

  • 8 tablespoons butter, divided
  • 1/3 diced onion
  • 1 garlic clove, minced
  • 4 ounces white mushrooms, coarsely chopped
  • 4 ounces crimini mushrooms, coarsely chopped
  • 1/2 teaspoon sea salt
  • 1/4 cup half and half
  • 1 cup shredded Wisconsin Cheddar
  • 1/3 cup crumbled cooked bacon
  • 9 sheets phyllo dough, each cut into 8 squares
  • 1/2 cup plum-chipotle sauce, raspberry-chipotle sauce or sweet barbecue sauce for serving
