Creamy Fennel and Leek Soup
Ingredients
- 1 onion, chopped
 - 3 stalks celery, chopped
 - 2 medium fennel bulbs (stalks removed), chopped
 - 3 medium leeks (white parts only), sliced
 - 2 tablespoons olive oil
 - 2 tablespoons butter
 - 1 medium head cauliflower, chopped
 - 1 quart chicken or vegetable stock (or broth)
 - 1-2 cups water
 - 2 cups whole milk
 - Kosher salt, to taste
 - 1/4 teaspoon ground white pepper, or to taste
