Peach Basil Pie

Ingredients

For the pastry crust
  • 2 1/4 cups all-purpose flour
  • 2 teaspoon sugar
  • 1/2 teaspoon salt
  • 2 sticks, cold unsalted butter, cut into 1/2 inch pieces
  • 5-6 tablespoons cold water
For the filling
  • 6 ripe peaches, skin and pits removed, sliced 1/4-1/2 inch thick
  • 1/3 cup cane sugar
  • 1/4 cup light brown sugar
  • 1/3 cup all-purpose flour
  • Juice from 1 lemon
  • 10 medium to large basil leaves cut into chiffonade
  • 2 tablespoon unsalted butter, cut into 1/4 inch cubes
  • Egg wash
