Ingredients

  • 1 onion, chopped
  • 3 stalks celery, chopped
  • 2 medium fennel bulbs (stalks removed), chopped
  • 3 medium leeks (white parts only), sliced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 medium head cauliflower, chopped
  • 1 quart chicken or vegetable stock (or broth)
  • 1-2 cups water
  • 2 cups whole milk
  • Kosher salt, to taste
  • 1/4 teaspoon ground white pepper, or to taste
