Chilled Beet and Beet Green Soup

Ingredients

  • 1 bunch red beets (about 1-3/4 pounds)
  • 1 medium red onion, trimmed and quartered
  • 1 tablespoon granulated sugar
  • 2 tablespoons cider vinegar; more to taste
  • 1 teaspoon caraway seeds
  • Kosher salt
  • 5 medium cloves garlic, peeled
  • Freshly ground black pepper
  • 1 cup olive oil
  • 2 1/2-inch-thick slices rye bread, crusts removed, cut into 1/2-inch dice
  • 1/2 cup sour cream
  • 1/4 cup finely chopped fresh dill
