Chocolate Cherry Cupcakes
Ingredients
- 5 ounces dark chocolate
 - 3/4 stick butter, softened
 - 3/4 cup and 1 tablespoon soft light brown sugar
 - 2 large eggs, separated
 - 1 1/2 cups all-purpose flour
 - 3/4 teaspoon baking powder
 - 3/4 teaspoon bicarbonate of soda
 - Pinch of salt
 - 250 miligrams milk
 - 1 teaspoon vanilla
 - 1/2 cup cherry jam
 - 1 cup sour cherries, pitted
 - 2 tablespoons Amaretto liquor (optional)
 
For the chocolate ganache
- 3 1/2 ounces dark chocolate
 - 3/4 heavy cream
