Chocolate Cherry Cupcakes

Ingredients

  • 5 ounces dark chocolate
  • 3/4 stick butter, softened
  • 3/4 cup and 1 tablespoon soft light brown sugar
  • 2 large eggs, separated
  • 1 1/2 cups all-purpose flour
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon bicarbonate of soda
  • Pinch of salt
  • 250 miligrams milk
  • 1 teaspoon vanilla
  • 1/2 cup cherry jam
  • 1 cup sour cherries, pitted
  • 2 tablespoons Amaretto liquor (optional)

For the chocolate ganache

  • 3 1/2 ounces dark chocolate
  • 3/4 heavy cream
