Curried Shrimp
Salad Pita Pockets

Preparation

  • 1/2 pound shrimp, peeled and deveined
  • 1/2 cup plain Greek yogurt
  • 3 tablespoons extra-virgin olive oil, divided
  • Juice from half a lemon
  • 1/2 cup chopped cilantro
  • 2 teaspoons curry powder
  • 1 tablespoon freshly minced ginger
  • 2 teaspoons minced shallot
  • 1/2 cup chopped green apple
  • 1/3 cup dried cranberries
  • 1/4 cup coconut shavings, lightly toasted
  • 1 whole wheat pita, cut in half
  • 1 pinch of coarse salt and freshly ground pepper
