Soba Noodle Soup
with Shitakes and Tofu

Ingredients

  • 1/4th pound soba noodles
  • 6 ounces shitake mushrooms, lightly rinsed of any grit
  • 1 inch piece fresh ginger, minced
  • 3 garlic cloves, minced
  • 1 tablespoon brown sugar
  • 1/4 cup soy sauce
  • 1/2 block firm tofu (or silken, whatever you have) cut into 1-inch strips
  • 3 scallions, cut on the diagonal
  • 1 tablespoon orange zest
  • Sprinkle of sesame seeds
  • 1/2 sheet nori paper, cut into thin strips
