Ingredients

  • 6 ounces spaghetti
  • 1 tablespoon olive oil
  • 4 pieces thick-cut bacon
  • 1 small shallot, minced
  • 2 garlic cloves, minced
  • 8 ounces chard, leaves washed and shaken dry
  • 4 ounces grated smoked mozzarella, divided
  • 1 ounce grated parmesan or other hard grating cheese
  • 1 tablespoon minced fresh oregano (or 1 teaspoon dried)
  • Salt & freshly ground black pepper to taste
