Dutch Baby with Caramelized Vanilla Bean Pears

Ingredients

  • 1/3 cup of sugar
  • 3 large eggs, at room temperature
  • 2/3 cup of milk, at room temperature
  • 1/3 cup of all-purpose flour
  • 1/3 cup of whole wheat pastry flour
  • 1 vanilla bean pod
  • 1/4 teaspoon of cinnamon
  • 1/8 teaspoon of freshly grated nutmeg
  • Pinch of salt
  • 1/2 stick and 1 tablespoon of unsalted butter, cut into pieces
  • 1 large pear, cored and cut into 1/2 inch slices
  • Powdered sugar, for serving
