  • 1 16-ounce tub ricotta cheese
  • 4 sprigs thyme
  • 1 batch pizza dough or a ball of store bought
  • 1 cup shredded Parmesan or Pecorino Romano cheese
  • Zest from two lemons
  • Salt and pepper
