Lemon Berry Mascarpone Sweet Rolls

Ingredients

For the dough

  • 1 cup milk
  • 2/3 cup sugar
  • 1 1/2 Tablespoons rapid rise dry yeast
  • 1/2 cup unsalted butter, at room temperature
  • 2 large eggs
  • 1/2 teaspoon lemon zest
  • 1/2 teaspoon salt
  • 4 1/4 cups all purpose flour, plus more for sprinkling

For the filling

  • 1 1/2 cups frozen mixed berries, (mine was a mix of blueberry, raspberry, and blackberry)
  • 1/3 cup sugar
  • 2 Tablespoons honey
  • 1 teaspoon lemon zest
  • 6 ounces mascarpone cheese
  • 2 Tablespoons butter, melted and cooled

For the glaze

  • 1 1/2 cup powdered sugar
  • 2 Tablespoons lemon juice
  • 1 Tablespoon milk
