Peach Salad with Ginger Dressing

Ingredients

For the dressing

  • 1/2 pound carrots, shredded then chopped
  • 1 tablespoon fresh minced ginger
  • 2 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 2 tablespoons water
  • 1 tablespoon rice wine vinegar
  • 1 teaspoon roasted sesame oil
  • 1 teaspoon canola oil
  • 1 teaspoon agave syrup
  • A few dashes of sriracha
  • 1/4 teaspoon salt

For the salad

  • 1 package of field greens washed, I used organic
  • 2 large ripe peaches, washed and sliced
  • 8oz fresh mozzarella or goat cheese
