Pumpkin Seed Brittle

Ingredients

  • 1 teaspoon butter, or canola oil spray, for lining a rimmed baking sheet
  • 2 cups turbinado sugar
  • 4 ounce (8 tablespoons) butter, unsalted
  • 1/3 cup light corn syrup
  • 1/2 cup + 2 tablespoon filtered water
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 and 1/2 tablespoon Kosher flake salt, plus extra for sprinkling
  • 1 and 1/2 cup raw pepitas/pumpkin seeds (or 12 ounce roasted, salted, unchopped nuts)
  • Chocolate (optional)
