Sesame Chicken

Ingredients

For the Marinade

  • 1 cup chicken stock
  • ½ cup water
  • ½ cup soy sauce
  • ¼ cup honey
  • ¼ cup rice wine vinegar
  • 3 tablespoons light brown sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon sesame oil
  • 1½ pounds boneless, skinless chicken breast, cut into 1-inch chunks

For the Sauce

  • 1 tablespoon sesame oil
  • 2 garlic cloves, minced
  • 1 tablespoon minced fresh ginger
  • 1 teaspoon chili paste (can substitute a couple pinches of red pepper flakes)

For Coating & Frying

  • 3 egg whites
  • 1½ cups cornstarch
  • ½ cup all-purpose flour
  • ½ teaspoon baking soda
  • 6 cups vegetable oil, for frying
  • Sesame seeds, to garnish
  • Scallions, sliced, to garnish
