Squash Yogurt Soup with Panko Crusted Chicken

Ingredients

  • 4 cups of peeled and chopped mixed squash
  • 2 cups of peeled and chopped Granny Smith Apples
  • 1 clove of garlic, minced
  • 1 tablespoon extra virgin olive oil
  • 2 cups chicken or vegetable stock
  • 1 tablespoon low sodium soy sauce
  • 1 tablespoon Sambal Olek (a chili paste)
  • 3 cups water
  • 2 cups fat free Greek yogurt
  • 2 lean chicken breasts
  • 1 beaten egg
  • 1/2 cup plain flour
  • 1 cup panko bread crumbs
  • 1 /2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon cayenne pepper
  • Vegetable oil for frying
