Vegetarian Pot Pies with Feta Scallion Biscuits

Ingredients

For the filling

  • 3 tablespoons butter
  • 1 medium yellow onion, chopped
  • 1 red bell pepper, seeded and chopped
  • 2 carrots, peeled and chopped
  • 12 ounce baby bella mushrooms, sliced
  • ¾ cup frozen peas
  • 2 cloves garlic, minced
  • ½ tablespoon red pepper flakes
  • 6 tablespoon all-purpose flour
  • 2 cups veggie broth
  • Salt and pepper, to taste

For the biscuit topping

  • 1½ cups all-purpose flour
  • 1½ tablespoon baking powder
  • ½ tablespoon salt
  • Freshly ground black pepper, to taste
  • 6 tablespoon cold unsalted butter, cut into pieces
  • ¼ cup crumbled feta cheese
  • ¼ cup chopped scallions
  • ½ cup plus 1-2 tablespoons buttermilk
