Green Garlic, Chive and Cheese Souffles with Roasted Asparagus

Ingredients

  • 5 tablespoons unsalted butter, softened
  • 1/2 cup (about 2 ounces) grated parmesan
  • 2 stalks green garlic, finely chopped
  • 2 small spring onions, finely chopped
  • Salt
  • Zest and juice of 1/2 a lemon
  • 3 tablespoons flour
  • 1 1/4 cups milk or half and half
  • 4 egg yolks
  • 6 egg whites, at room temperature
  • 1 cup (4 ounces) grated cheese, or crumbled chevre
  • 1/4 cup minced chives
