Lemon Bars with Ginger Shortbread

Ingredients

For crust

  • 1/2 cup powdered sugar
  • 1 1/2 cups all purpose flour
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, at room temperature
  • 1/2 ounce freshly grated ginger
  • 2 ounces crystallized ginger, chopped

For filling

  • 1/2 cup all purpose flour
  • 2 cups sugar
  • Freshly grated zest of two or three lemons
  • 1 cup + 2 tablespoons freshly squeezed lemon juice
  • 6 large eggs
  • 1 egg yolk
  • Pinch of salt
