Lobster and Bacon Macaroni and Cheese

  • 3/4 pound (12 ounces) cavatappi pasta
  • 1/2 cup + 1 tablespoon unsalted butter, divided
  • 2 tablespoons all-purpose flour
  • 2 cups half and half
  • 2 teaspoons hot sauce
  • 1/2 teaspoon smoked paprika
  • 3/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 8 ounces (about 2 cups) grated Wisconsin Havarti Cheese
  • 4 ounces (about 1 cup) grated or chopped Wisconsin Smoked Cheddar Cheese
  • 1 cup coarsely chopped lobster meat
  • 1/2 cup finely chopped cooked bacon
  • 1/4 cup panko bread crumbs
