Rustic Mushroom, White Wine and Creamy Cheesy Spaghetti

Ingredients

  • 1 brown onion, peeled and diced
  • 3 large cloves garlic, minced
  • 200 grams Swiss Brown mushrooms
  • 100 grams Shiitake mushrooms
  • Small handful flat leaf parsley
  • 1 cup vegetable stock
  • 1/2 cup white wine
  • 3 sprigs thyme
  • 75 grams soft goat’s cheese
  • 2 1/2 heaped tablespoons light sour cream
  • Salt and freshly ground black pepper
  • Handful pecans, toasted and chopped
  • 300 grams spaghetti
  • 50 grams Pecorino (or Parmesan) plus extra for serving
  • Extra virgin olive oil for serving
