Tequila and Beetroot Bolognese with Linguini

Ingredients

  • 3 tablespoons olive oil
  • 1 onion finely chopped
  • 1/2 a medium fennel bulb finely chopped
  • 500 grams lean beef mince
  • 3 cloves of garlic, crushed
  • 1/4 cup of tequila
  • 2 tablespoons tomato paste
  • 2 cups of grated beetroot
  • 1 tin of tomatoes
  • 250 milileters beef stock
  • 2 tablespoons of chopped fennel leaves
