Baked Yams with Saffron Aioli

Ingredients

  • 6 garnet yams or other sweet potatoes (about 8 ounces each)
  • 3/4 cup extra-virgin olive oil
  • 1/2 cup grapeseed oil or vegetable oil
  • 2 whole cloves garlic, plus 1/2 small clove, finely grated
  • Pinch of saffron threads, crushed
  • Kosher salt
  • 2 large egg yolks, at room temperature
  • Juice of 1/2 lemon
  • Chopped fresh parsley, for topping (optional)
