Fresh Corn Ravioli with Herb Cream Sauce

Ingredients

For Pasta Dough

  • 1 3/4 cup “00” flour or all-purpose flour
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 tablespoon water (or more or less as needed)

For Filling

  • 2 cups corn kernels (cut from about 3 ears)
  • 2/3 cup whole milk ricotta cheese
  • 1 egg
  • 2 tablespoons heavy cream
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon chopped fresh basil
  • 1 teaspoon chopped fresh oregano

For Sauce

  • 1/2 cup white wine
  • 1/4 cup butter
  • 1/4 cup cream
  • 1/4 cup chopped mixed herbs (parsley, oregano, and basil)
