Lamb Osso Buco with Creamy Polenta

Ingredients

  •  1 pound lamb leg steak or similar cut of lamb
  • 3 tablespoons olive oil
  • 1 large yellow onion, sliced lengthwise
  • 2 large carrots, chopped
  • 2 ribs celery, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 cup dry red wine
  • 1 cup chicken stock
  • 2 sprigs rosemary
  • 2 sprigs thyme
  • Sea salt and pepper to taste

Creamy Polenta

  • 1 cup polenta
  • 4 cups chicken or vegetable broth
  • 2/3 cup grated Parmesan cheese
  • Salt and freshly ground black pepper
