Spiced-Rubbed Lamb Chops

Ingredients

  • 1 teaspoon finely shredded orange peel
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cumin
  • 1/8 teaspoon salt
  • 8 lamb rib chops, cut 1 inch thick (1-3/4 pounds total), frenched if desired
  • 2 teaspoons olive oil
  • 1 medium carrot, halved lengthwise and sliced
  • 1/2 cup chopped onion
  • 1/2 cup water
  • 1 14 1/2 ounce can diced tomatoes
  • 3/4 cup canned chickpeas (garbanzo beans), rinsed and drained
  • 1/2 cup whole-wheat couscous
  • 1/4 cup snipped fresh Italian (flat-leaf) parsley
  •  Orange wedges
