Quinoa Fritters or Scramble


4 strips of bacon, chopped
2 (14 ounces) cans white kidney (cannellini) beans, drained, rinsed, and mashed
200 grams steamed broccoli, finely chopped
3 cups cooked quinoa
1/2 cup grated Gruyere cheese or mozzarella
1 medium or large egg, lightly beaten
1/4 cup chopped fresh basil leaves
Olive oil, for frying
Salt and pepper
