Tangerine Crème Brulees Tartelettes

Ingredients

For the cocoa cardamom sable dough

  • 1 stick butter, at room temperature
  • 3/4 cup powdered sugar
  • 1 large egg
  • 1 1 /2 cups flour
  • 1 tablespoon natural cocoa powder
  • 3/4 teaspoon ground cardamom
  • Pinch of salt

For the tangerine cream

  • 2/3 cup sugar
  • 3 eggs
  • 6 egg yolks
  • 3 tablespoons all purpose flour
  • 1 stick butter, melted and cooled
  • 2/3 cup tangerine juice
  • Grated zest of 2 tangerines
  • 2 tablespoons Grand Marnier (optional)
